The acid value in an alimentary fat is a measure of the suitability of the treatment and preservation of the alimentary fats and thus the acidity represents a fundamental indicator of product genuineness. Even olive oil can reach a high free acid content when the olives are gathered and processed incorrectly.
Determination of the percentage of acidity and of the number of peroxides in oil is of considerable importance for a quality check during pressing and storage of the olives.
Soaps,
thanks to their solubility in water and insolubility in oil, can
then be separated from the fat using appropriate procedures. Food
industries use this procedure to lower the acidity of a fat
and improve its organoleptic characteristics.
